Optimization of ultrasonic-assisted extraction of polyphenols and antioxidants from cumin (Cuminum cyminum L.)

Ultrasonic-assisted extraction (UAE) using response surface methodology (RSM) was employed for the highly efficient of bioactive compounds such as polyphenols and antioxidants from cumin (Cuminum cyminum L.) seeds. A central composite design (CCD) consisting three variables five levels used to estimate significance each process variable in application UAE seed extraction. Process optimized were ethanol concentration (0-80%, v/v), time (15-75 min), temperature (15-75°C). RSM determine optimal conditions compounds. Four-dimensional plots generated indicate polynomial equations good-fit models. The then predicted by superimposing these four-dimensional plots. Based on graph overlapped contour plots, conditions: 40% v/v, 51 min, 39°C, found give maximal values yield (20.31%), total polyphenol content (27.11 mg GAE/g), antioxidant activity DPPH (52.47%), ABTS (41.04%). Verification experiments carried out under conditions, there a good fit between estimated experimental values, suggesting that model valid accurate process. In conclusion, showed effectiveness recovery valuable cumin.
